Water treatment for combi ovens

The Unox CHEFTOP and BAKERTOP MIND.Maps™ combi ovens use water for steaming and for their automatic washing systems, but how important is it to use a water treatment method, and how do you know which one to choose?

Running the oven without a filter or with an unsuitable filter can lead to the build-up of scale, which can have a major impact on the longevity of the oven and could lead to severe damage which is not covered by warranty. It is therefore essential that the correct water treatment system is fitted if required in order to protect the oven and its components over time.

Unox UK offers two types of filter: the UNOX.Pure water filter or the UNOX.Pure-RO reverse osmosis filtering system. The UNOX.Pure filtering system improves the water quality by significantly reducing the carbonate hardness, thus avoiding scale deposits inside the oven. The reverse osmosis filtering system reduces the carbonate hardness of the water to zero and filters metal ions such as lead and copper and filters any solid particles. In addition, the reverse osmosis unit has a built in pump that can compensate for a lack of pressure in the water supply. For both filters the Unox MIND.Maps™ ovens will monitor the actual water consumption and will advise the user when the cartridge needs to be replaced.

How do you know if you need a filter, and if so which of these should be fitted? It is essential that a water test is carried out before the oven is installed. This will determine the water hardness, conductivity and chlorides, and will enable the engineer to recommend either that no filter is fitted, or that an UNOX.Pure or UNOX.Pure-RO is required. It is worth remembering that fitting a filter when it is not needed can cause as much harm as not fitting a filter in an area with particularly hard water, so a full site survey by an Unox UK authorised service partner is the very best way to ensure that you get the correct water treatment for your oven.
